Store your organic carrots in the refrigerator crisper drawer. If the leafy tops are still attached, remove them before storage, as they draw moisture from the roots. Keep fresh carrots unwashed in a reusable or perforated produce bag to maintain humidity.
When stored properly, fresh organic carrots can stay crisp for 1–3 months, and sometimes even longer under ideal refrigerated conditions. For maximum freshness, carrots can also be stored submerged in cold water in a sealed container, changing the water regularly.
For long-term storage, organic carrots can be blanched and frozen, fermented, pickled or stored in a cool, humid root-cellar environment.
