Add fresh organic tatsoi to salads, stir-fries, soups and noodle dishes, or lightly steam or sauté it as a simple vegetable side. Its tender leaves cook quickly and pair beautifully with garlic, ginger, sesame and other Asian-inspired flavours.

Store your organic tatsoi unwashed in the refrigerator crisper drawer, ideally inside a reusable produce bag or sealed container lined with a paper towel to absorb excess moisture. Keeping the leaves cool and dry helps your fresh tatsoi stay crisp for longer.
When stored correctly, fresh organic tatsoi can keep for around 1–2 weeks, and exceptionally fresh tatsoi may last longer under ideal refrigerated conditions. Remove any damaged or yellowing leaves as they appear to help preserve the remaining Asian greens.
If your tatsoi begins to wilt, soak the leaves in ice-cold water for 10–15 minutes to help restore their crisp texture. For longer-term storage, tatsoi can be blanched and frozen for several months.
